Short Bio

Dr. Sawyer is a classically trained applied meat scientist at Auburn University in the Department of Animal Sciences. Earning animal science degrees from Kansas State University, Oklahoma State University, and the University of Arkansas focused on the arena of meat sciences. Research initiatives are geared to assist agriculture in creating safe and wholesome meat products through a myriad of applications that include live animal production, alternative packaging methodologies or value-added product development. With brief stints of foundational employee development within the Arkansas Cooperative Extension Program, Tyson Foods, and Tarleton State University, Dr. Sawyer has found a career home within the academy. Dr. Sawyer’s passion for engaging audiences to capture a deeper understanding of their food origins is vital to creating opportunities of enhanced development for contributors to improve production agriculture for the meat or food industries.

Meat quality and the characteristics that influence changes to fresh and cooked meat, with emphasis placed on postmortem changes. Specific emphasis is placed on storage life stability as it pertains to surface color, packaging methodology, and flavor profiles.
